Where did the summer go???

Wow… not exactly sure where the summer went! Luckily we’re moving out of the hot season and moving into good weather in Houston. I never would have thought I’d be so excited for the temps to get DOWN to the mid 80’s!

Lots of changes and not a lot of time to blog about them but wanted to share a few sunrise shots from our backyard and one from the pond around the block… a girl just can’t complain!






I heart cornbread

Bob’s Red Mill makes a pretty tasty cornbread mix… and once I add my own little twist, I think it tastes pretty damn good. Tonight’s dinner:

– Crisp romaine with grape tomatoes and blue cheese dressing
– Roasted pork tenderloin
– Cornbread with roasted jalapeños



Friday night in: date night!

It’s been a long week for my honey – holiday weeks are always crazy in the grocery industry. The perfect solution was a date night in. Apps and drinks were on the menu:

– A few of our favorite cheeses: whiskey cheddar, manchego and 5-year gouda
– Caprese skewers: tomato, mozzarella and basil drizzled with EVOO and balsamic
– Spicy mango shrimp: ginger sauteed shrimp, fresh mango, red onion, jalapeno and lime
– martinis and a vodka tonic




Day Five: finding a routine

After a few days in Texas I’ve settled into a routine. Get up, get out for a walk, come home (sweating buckets), make some breakfast and try to start my day. Spend at least an hour fighting with the wifi in our apartment to try to get it to like my laptop, only to have both cable and internet go out for the day. Give up, go to Starbucks for some much needed coffee and free wifi access. Apply for a job or two. Deal with relocation paperwork. Surf Facebook.

You get the drift.

So today I got started a little late. Just a half an hour late… but it was enough. Whew – it was TOASTY by the time I got back from my walk! 86 degrees, 75% humidity. Don’t forget, I’m a Northwest girl and although I love the heat, I’m still getting used to working out in it. That being said, it was a lovely 3.5 mile walk around TownCentre and I just can’t complain about the view.

Since breakfast turned into brunch, I thought I’d go for the protein to hold me through until dinner. A couple of eggs, leftover pork tenderloin and some pan seared avocado and I’m ready to take on the rest of my day!



Day One: the Texas adventure

Well, this is it. I’m officially a resident of Texas. We started the day with a walk around The Woodlands TownCentre. A balmy 85 degrees at 8:30am… can’t complain! A little Starbucks to jump start the heart and we’re off for a little house hunting.
