I love good food and I really enjoying cooking, but sometimes it’s easy to get stuck in a rut and cook the same things over and over.  I’ve been inspired as of late to come up with some new dishes, and here was a favorite at our dinner table last night:

Spicy Cauliflower
1 head of cauliflower, chopped into bite-size pieces
1 tbsp olive oil
1/2 cup chicken stock
1/4 cup coconut milk
1 tsp cayenne pepper (or more to taste)
salt and pepper
1/4 cup grated parmesan cheese

Lightly blanch the cauliflower in water, either on stovetop or in microwave. Heat a non-stick skillet over medium-high heat; add the olive oil. Drain the cauliflower and add to the hot skillet, stirring occasionally until cauliflower has some browning (2-3 minutes). Sprinkle with cayenne pepper and stir. Add chicken broth and coconut milk; cover and simmer for 2-3 additional minutes. Remove from heat; drain liquids. Add salt and pepper (and cayenne, optional) to taste and sprinkle with cheese just prior to serving.
